This ancient herbal drink introduced in Sicily by the Arabs is prepared using almonds which are crushed in a mortar
and dissolved in water, then filtered through a sieve of cotton and sweetened to taste, using 100g blanched almonds for each liter of water. Traditionally it is used as a thirst quencher. After preparation, it is kept in the refrigerator for 3-4 days.
Almond varieties that we use for our products are the Tuono, the Genco, Supernova Ferragnes, Romana, Pizzuta and Fascionello, which are all typical Sicilian varieties. The almond harvest takes place in August and September. After
harvesting the almonds and after removing the husk, they are dried in the sun for 3-4 days. After being dried, they are
stored in bags and preserved in cool and dry storage areas. The shell perfectly protects the almond and allows it to
keep for the whole year or more. At the time of its use the almond is shelled and peeled, the shredding phase during
which almonds are ground in a special cutter and refined to obtain the cream follows. The cream is then packaged in
glass jars for subsequent commercialization, or packed in 25 kg buckets for the production of almond milk.
VALDIBELLA Almond Milk retains all the properties and the beneficial effects of the almonds. It is gluten free and therefore specifically for people with intolerance. Naturally, almonds contain unsaturated fatty acids, vitamins E and B group, and minerals such as potassium, phosphorus, magnesium, iron, zinc and calcium.
