the growers the dignity of their craft, a beautiful profession which fills those who practise it with pride.

food of high quality while developing a positive action in the social environment
of my region.

 

 

We prefer green pruning for our vines because we want to produce high quality grapes; thus, in a very natural way, the wine will
be of high quality except
if a mistake has been
made. In my opinion,
high quality wines gives
you something more
in comparison with industrial wines, which
seem anonymous.

Valdibella cooperative has chosen a production path based on the enhancement of traditional vines. One of our most ancient and most planted varieties is certainly the Catarratto cultivated almost exclusively in Western Sicily. We plant it in the high hills and grow it using the traditional free- standing bush system. Besides the Catarratto we produce other single-variety wines such as the Nero d'Avola, Grillo, Inzolia, Catarratto Extra Lucido and the less known Perricone. Other international grape varieties are planted such as Cabernet Sauvignon, Chardonnay, and Muller Thurgau.

 

HARVEST

The harvest starts around the beginning of September and ends in mid-October. All our grapes are collected in 15 kg boxes. In this way, the grapes enter the winery in a perfect state without having been crushed with consequent leakage of juice. Before collecting we wait until the grapes have reached their full maturity. This allows us to obtain balanced wines with intense color and aromatic complexity. Only a healthy, organic farming allows this maturity without the risk of poor results. Our Sicilian climate is ideal for this type of viticulture. 


A CELLAR WITH NO CHEMICALS 

In the cellar, we have a full respect for the natural qualities of our grapes and keep interventions to a minimum. In the winery,we do not add any synthetic chemical substances. No gelatin or egg albumin. The clarification is naturally done
with the help of the low temperature. In white wines, when it is necessary, we clarify with bentonite (natural clay). 

SULPHITES: FEW OR NONE
The climate of our region and the collection in boxes allow us not to use sulfites on the grapes. Later, in the cellar,
we use small doses of sulfites (still below half of the doses legally allowed). Some wines are also made entirely without adding any sulfites. 

SPONTANEOUS VIVIFICATION 
Many of our wines are made by spontaneous fermentation. The organic grapes are rich in native yeasts that are perfectly able to carry out the fermentation. Every grape has its own composition of yeasts so that each wine obtained is a true expression of the land that produced it. 

NO INOCULATION FOR MALOLACTIC 
Our wines develop naturally malolactic fermentation. Indigenous bacteria and the suitable temperatures we experience in
that period are sufficient. When we have a struggling wine, we add some lees of the wines that already have gone through
the fermentation process. 

NO ENRICHMENT
In our climate maturation will always be fully achieved. The grapes always have the right sugar content and we do not need
any additives. Our wines are always dry with less than 2 grams of residual sugar. Sometimes it may happen in spontaneous fermentation that we have a sugar content of 3-4 grams that yeasts can not ferment. The wine naturally finds its balance. 

REFINING
We refine our wines in stainless steel or wooden barrels used for many years. We try to give the wine its original taste and
do not change with an excessive use of new barrels which tend to even out the taste of wine.
